Brown Butter Corn Flake Chocolate Chip Cookies

What You Need:

3 cups AP flour

1 teaspoon baking soda

1 teaspoon sea salt

2 sticks of unsalted butter

1 1/2 cups packed light brown sugar

1/4 cup granulated sugar

2 teaspoons vanilla

2 large eggs at room temp.

1/2 chopped dark chocolate chunks

1/2 cup chocolate chips (I used milk chocolate chips)

3/4 cup corn flakes

Flakey sea salt for sprinkling on top

What You Do:

Preheat your oven to 350. Line baking sheet with parchment paper or a slipmat. Brown butter over medium heat in a skillet. Stir frequently and watch to make sure the butter doesn’t burn. You are just looking for an amber color. Once the butter is browned, remove from heat, pour into a separate bowl and let it cool a little bit. 

Combine flour, baking soda, salt and set aside.

In the bowl of a stand mixer (or in a large bowl if you’re using a hand mixer), add both sugars and browned butter and mix over medium speed for 3-4 minutes. Add eggs and vanilla. Mix until combined. Next add the flour mixture. Mix at low speed until just combined (leaving a few streaks of flour....don’t over mix). Finally, add chocolate chunks, chips and corn flakes and mix using a spatula until evenly incorporated. 

Using a cookie scoop, scoop out dough and place onto the baking sheet about 2 inches apart. Place dough balls into the freezer for 15 mins before baking. You can also scoop all the dough into balls and keep them in the freezer until you are ready to bake. Bake for 12-14 minutes…..check at 11 minutes….each oven is different!! Once they come out of the oven, immediately sprinkle with flakey sea salt. Let cookies cool on cookie sheet for 4-5mins then transfer to a wire wrack to cool completely.
