Gluten-Free Dairy-Free Banana Chocolate Chip Muffins

What You Need:

1 Cup Almond flour

1/3 Cup Coconut sugar

1 teaspoon Cinnamon

1 1/2 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1 Generous Pinch of Sea Salt

1 Large Overripe Banana 

2 Large Eggs (room temp)

1/2 Tablespoon Coconut Milk

1/2 Cup Melted Coconut Oil

1 teaspoon Vanilla Extract

3/4 Cup Dairy Free Chocolate Chips (I use the Enjoy Life Brand)

What You Do:

Preheat oven to 360 degrees. Line a muffin tin with 12 muffin/cupcake liners.

In a medium sized bowl, whisk together almond flour, coconut sugar, cinnamon, baking powder, baking soda and sea salt. Set aside. In a large bowl, with fork mash the banana. Add eggs and beat eggs along with the mashed banana. Add coconut milk, coconut oil and vanilla to the egg and banana and mix well. Add the dry ingredient mixture to the wet ingredients and stir until just combined. Fold in chocolate chips. Using a cookie scoop even distribute muffin batter into lined muffin tin. Bake for 16-18 minutes….or until an inserted took pick comes out clean. Let cool on wire cooling wrack. ENJOY!!!

These are super moist, super flavorful and my kiddos (and husband) LOVE them! I’m not a professionally trained baker (spoiler alert)…so i’m always re-testing and tweaking recipes…this was my first time using almond flour and cutting out dairy…if you ever find a better way feel free to let me know!
