No-Churn Peach Cobbler (ish) Ice Cream
What You Need:
2 Cups cold heavy whipping cream
2 oz. softened cream cheese
1 can sweetened condensed milk
2 teaspoons vanilla
1/2 heaping teaspoon cinnamon
1 Tablespoon bourbon (optional)
2 ripe peaches diced and mashed
pinch of salt
3 Cinnamon graham crackers broken into pieces
What You Do:
Add cream cheese to the bowl of a stand mixer with whisk attachment. Beat on medium high speed until no clumps remain. In separate large bowl add sweetened condensed milk, vanilla, cinnamon and bourbon. Stir until combined. Prep peaches in a separate bowl by mashing to release juices stir in a pinch of salt and a spoonful of sugar. Set aside. Add heavy whipping cream to the cream cheese and whip on medium high until stiff peaks form. Gently fold the whipped cream mixture into the condensed milk mixture. Once blended, add the peaches and graham cracker pieces and fold in…..stirring only 2-3 times. Transfer ice cream to a bread loaf pan, cover with plastic wrap and freeze for at least 6 hours. YOU’RE GONNA LOVE IT.
