Peach Crumble Pie

What You Need:

1 pie crust (use favorite recipe or store bought works too)

For The Filling:

2 1/2 lbs. (4-5 ripe but not too ripe) peaches chopped into bite size pieces

1 cup sugar

1 Tablespoon corn starch

1 Tablespoon lemon juice

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

pinch of salt

For The Crumble:

1 cup flour

1 cup crushed cinnamon graham crackers

1/2 cup brown sugar

1 teaspoon baking powder

3/4 cup butter 

What You Do:

Preheat oven to 350. In large bowl combine peaches (I like to leave the skins on. I think it gives more flavor and better color), sugar, corn starch, lemon juice, cinnamon, nutmeg and salt. let sit and let the juices release! Next made the crumble. Combine the flour, graham crackers, brown sugar and baking powder. Mix well. Using pastry blender or a fork, blend in the butter until the mixture is crumbly. Drain peach mixture reserving about 1/4 cup to add back once you fill the pie. Now time to assemble the pie! Roll out pre-made pie dough and place into a 9 inch pie plate. Add the peach filling and 1/4 cup reserved liquid and top with the crumble.  Bake for 40-50 minutes. *check at 40. Let the pie cool then slice and serve with vanilla ice cream!
