French Toast Muffins
What You Need:
14 slices Challah bread
6 eggs
2 cups Milk
2 teaspoons vanilla extract
6 tablespoons sugar divided
1/2 teaspoon cinnamon
powdered sugar or syrup for serving
What You Do:
Preheat oven to 350 degrees. Grease or line a standard muffin tin (I just use cooking spray). Cut bread slices into cubes and place in a large bowl.
In a bowl whisk together milk, eggs, vanilla, and 3 tablespoons sugar. Pour over bread cubes, then gently stir to coat all the cubes in the egg mixture. Fill muffin tins with soaked bread cubes, packing gently to fill all of the cavity space. In a small bowl mix together remaining 3 tablespoons sugar, and cinnamon. Sprinkle over muffins. Bake for 20 minutes or until golden and bake through the middle. Serve warm topped with powdered sugar or syrup. You can get really creative with this if you want and mix in chopped nuts, apples, pears, blueberries any fruit really! Add a struggle topping instead of the cinnamon sugar to really add an extra crunch!!
