Peppermint Hot Chocolate Ice Cream Sugar Cookie Sandwich

Hot Chocolate Peppermint Ice Cream

What You Need:

3/4 cup cocoa powder

1/2 cup granulated sugar

1/3 cup packed brown sugar

Pinch of salt

1 cup whole milk

2 cups heavy cream 

1/2 teaspoon peppermint extract 

1/3 cup mini marshmallows

1/4 cup mini chocolate chips

3 candy canes crushed

What You Do:

Whisk together cocoa powder, both sugars, salt and milk. Make sure to remove any lumps. Next add the heavy cream and peppermint extract. Whisk until combined. Place mixture in the fridge for 2 hours or overnight….OR if you’re ready to get to the ice cream making just pull out your ice cream maker and start churning!! Once you begin to churn, set a timer for about 13-15 mins. Once the mixture has thickened, (at the very end) add the mini marshmallows, candy cane pieces and mini chocolate chips! Let it run for a couple minutes until it’s all blended. Turn off Ice cream maker and transfer ice cream to freezer safe container. I like to cover the top with some of the add ins to give it a little more…yum factor! Let the ice cream freeze for at least 2 hours. EAT!!! (or save for the cookies).

Sugar Cookies 

with a white chocolate dip and candy cane sprinkle

What You Need:

3 cups flour

1 teaspoon salt

1/2 teaspoon baking soda

1 cup sugar

2 sticks unsalted butter at room temp.

2 large eggs at room temp.

1 Tablespoon Vanilla

1/2 cup white melting chocolate 

3 crushed candy canes

What You Do:

Preheat oven to 375 degrees and line baking sheet with parchment paper. Whisk together flour, salt, baking soda and set aside. With a stand mixer or hand mixer, cream sugar and butter together until light in color….usually 3-5 minutes.  Scrape down sides of the bowl then add the eggs and vanilla. Mix well. Slowing add in the flour mixture and beat until JUST combined. Don’t over mix. It’s ok to have streaks of flour and finish mixing by hand. Using cookie scoop drop mounds about 3 inches apart and bake for 10-12 minutes! The bottom will be golden brown. Once the cookies have cooled, dip half of each cookie into melted white chocolate and sprinkle with crushed candy canes. Lay cookies out on parchment paper to let dry. Store in an air tight container.

I’m assuming yall know how to make an ice cream sandwich if you wish! But eating the cookies and ice cream by themselves is A-O-K!!
